Ingredients:

  • 1 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions:

  1. Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.

  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla extract.

  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.

  4. Roll the dough out onto a lightly floured surface to about 1/4-inch thickness. Use cookie cutters to cut out desired shapes and transfer to the prepared baking sheet.

  5. Bake the cookies for 8-10 minutes, or until they are lightly golden around the edges. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

  6. Once the cookies are cool, you can decorate them with your choice of frosting and sprinkles. Enjoy!
