Oatmeal Raisin Cookies
These hearty cookies are packed with oats and raisins and make a great addition to any holiday cookie platter.



Here is a recipe for oatmeal raisin cookies:

Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 3 cups old-fashioned oats
  • 1 cup raisins

Instructions:

  1. Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat the butter and sugars together until light and fluffy. Add the eggs and vanilla extract, and beat until well combined.
  3. In a separate mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Stir in the oats and raisins.
  5. Drop the dough by rounded tablespoons onto the prepared baking sheet, leaving about 2 inches of space between each cookie.
  6. Bake for 10-12 minutes, or until the edges are lightly golden.
  7. Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
