Mulled wine
This warm, spiced wine is the perfect drink to enjoy on a cold winter evening. To make it, combine red wine, sugar, orange juice, and spices such as cinnamon, cloves, and nutmeg in a saucepan and heat until steaming.

Ingredients:
- 1 bottle red wine
- 1/2 cup sugar
- 1 orange, sliced
- 4 cinnamon sticks
- 8 whole cloves
- 4 whole allspice
- 2 star anise
- Optional additional flavourings: a few slices of fresh ginger, a splash of brandy or other spirit, a few slices of apple
Instructions:
- In a large saucepan, combine the red wine, sugar, orange slices, and spices.
- If using, add any additional flavourings such as ginger, brandy, or apple slices.
- Heat the mixture over medium heat, stirring occasionally, until the sugar has dissolved and the wine is hot but not boiling.
- Reduce the heat to low and let the mulled wine simmer for 15-20 minutes, or until the flavours have melded together.
- Strain the mulled wine to remove the spices and orange slices.
- Serve the mulled wine hot, in mugs or heatproof glasses.
