Macarons
These delicate and flavourful cookies are made with ground almonds and are perfect for the holiday season.


Here is a recipe for macarons:

Ingredients:

  • 2 cups confectioners' sugar
  • 1 cup ground almonds
  • 3 large egg whites, at room temperature
  • 1/4 tsp cream of tartar
  • 1/4 cup granulated sugar
  • your choice of food coloring (optional)

For the filling:

  • 1 cup unsalted butter, softened
  • 2 cups confectioners' sugar
  • 1 tsp vanilla extract
  • your choice of food coloring (optional)

Instructions:

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. In a food processor, pulse the confectioners' sugar and ground almonds until they are finely ground.
  3. In a medium mixing bowl, beat the egg whites and cream of tartar together until soft peaks form. Gradually add the granulated sugar and beat until stiff peaks form. If you are using food coloring, add it now and mix until well combined.
  4. Gradually fold the dry ingredients into the egg whites until the mixture is smooth and shiny.
  5. Transfer the mixture to a pastry bag fitted with a round tip. Pipe 1-inch circles onto the prepared baking sheet, leaving about 1 inch of space between each cookie.
  6. Tap the baking sheet gently on the counter to release any air bubbles. Let the cookies sit at room temperature for about 30 minutes to form a skin.
  7. Bake the cookies for 15-20 minutes, or until they are firm and the tops are slightly golden.
  8. Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

For the filling:

  1. In a large mixing bowl, beat the butter until it is smooth and creamy. Gradually add the confectioners' sugar and beat until it is well combined. Add the vanilla extract and food colouring (if using) and beat until the filling is smooth and fluffy.
  2. Transfer the filling to a pastry bag fitted with a round tip.
  3. Pair the cookies up by size and sandwich them together with the filling.
