Gingerbread Cookies

These soft and spicy cookies are a holiday favourite



Ingredients
:

  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup packed dark brown sugar
  • 1 large egg
  • 1/2 cup molasses
  • 1 teaspoon vanilla extract

Instructions:

  1. In a medium bowl, whisk together the flour, baking powder, cinnamon, ginger, cloves, nutmeg, and salt. Set aside.

  2. In a large mixing bowl, beat the butter and brown sugar together until light and fluffy. Beat in the egg, molasses, and vanilla extract. Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.

  3. Divide the dough in half and wrap each half in plastic wrap. Refrigerate for at least 1 hour, or until the dough is firm enough to roll out.

  4. Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.

  5. On a lightly floured surface, roll out one half of the dough to about 1/4-inch thickness. Use cookie cutters to cut out desired shapes and transfer to the prepared baking sheet.

  6. Bake the cookies for 8-10 minutes, or until they are firm to the touch. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

  7. Repeat with the remaining dough. Once the cookies are cool, you can decorate them with your choice of frosting and sprinkles. Enjoy!
