Gingerbread cake


Gingerbread cake is a delicious and flavourful dessert that combines the warm, spicy flavours of gingerbread with a moist, tender cake. It is typically made with molasses, brown sugar, and spices like cinnamon, ginger, and allspice, which give it its signature flavour. The cake is often served around the holidays, but it is delicious any time of year.

To make gingerbread cake, you will need:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 3/4 cup packed brown sugar
  • 1/4 cup molasses
  • 2 large eggs
  • 1 cup buttermilk

To prepare the gingerbread cake, preheat your oven to 350°F (180°C) and grease a 9-inch square baking pan. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, ginger, cinnamon, cloves, and nutmeg. In a large mixing bowl, beat the butter and brown sugar together until creamy. Add the molasses and eggs, beating until well combined. Add the dry ingredients to the wet ingredients, alternating with the buttermilk, and mix until just combined. Pour the batter into the prepared pan and smooth the top with a spatula.

Bake the cake for 35-40 minutes, or until a toothpick inserted into the centre comes out clean. Let the cake cool in the pan for a few minutes, then transfer it to a wire rack to cool completely. Serve the gingerbread cake on its own, or top it with a dollop of whipped cream or a drizzle of caramel sauce for an extra indulgent treat. Enjoy!
