Chocolate peppermint cake
Chocolate peppermint cake is a delicious and festive dessert that combines rich chocolate flavor with the refreshing taste of peppermint. It is a perfect treat to enjoy during the holiday season, or any time you want a decadent and indulgent dessert.
To make chocolate peppermint cake, you will need:
- 1 3/4 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup hot water
- 1/2 teaspoon peppermint extract
- 2 cups semisweet chocolate chips
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 3-4 tablespoons heavy cream
- 1/2 teaspoon peppermint extract
To prepare the chocolate peppermint cake, preheat your oven to 350°F (180°C) and grease two 9-inch round cake pans. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt. Add the buttermilk, vegetable oil, eggs, and vanilla extract, and mix until well combined. Stir in the hot water until the batter is smooth. Divide the batter evenly between the prepared pans and smooth the tops with a spatula.
Bake the cakes for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for a few minutes, then transfer them to a wire rack to cool completely.
To make the peppermint frosting, melt the chocolate chips in a heatproof bowl set over a pan of simmering water (or in the microwave). Let the chocolate cool slightly, then beat it together with the butter, powdered sugar, heavy cream, and peppermint extract until smooth. Spread the frosting over the top of one of the cooled cakes, then top it with the second cake. Serve the chocolate peppermint cake slices and enjoy!
