Biscotti
These crunchy cookies are perfect for dipping in coffee or hot chocolate and make a great addition to any holiday dessert spread.
Here is a recipe for biscotti:
Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 4 large eggs
- 1 tsp vanilla extract
- 3 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp salt
- 1 cup chopped nuts (optional)
Instructions:
- Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, beat the butter and sugar together until light and fluffy. Add the eggs and vanilla extract, and beat until well combined.
- In a separate mixing bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the nuts, if using.
- Divide the dough in half and shape each half into a log about 12 inches long and 3 inches wide. Place the logs on the prepared baking sheet and flatten them slightly.
- Bake for 30 minutes, or until the logs are lightly golden.
- Remove the cookies from the oven and let them cool on the baking sheet for about 10 minutes.
- Using a serrated knife, cut the logs into 1/2-inch thick slices. Place the slices back on the baking sheet and bake for an additional 10-15 minutes, or until they are crisp and golden.
- Remove the biscotti from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
