Biscotti
These crunchy cookies are perfect for dipping in coffee or hot chocolate and make a great addition to any holiday dessert spread.

Here is a recipe for biscotti:

Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup chopped nuts (optional)

Instructions:

  1. Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat the butter and sugar together until light and fluffy. Add the eggs and vanilla extract, and beat until well combined.
  3. In a separate mixing bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the nuts, if using.
  4. Divide the dough in half and shape each half into a log about 12 inches long and 3 inches wide. Place the logs on the prepared baking sheet and flatten them slightly.
  5. Bake for 30 minutes, or until the logs are lightly golden.
  6. Remove the cookies from the oven and let them cool on the baking sheet for about 10 minutes.
  7. Using a serrated knife, cut the logs into 1/2-inch thick slices. Place the slices back on the baking sheet and bake for an additional 10-15 minutes, or until they are crisp and golden.
  8. Remove the biscotti from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Enjoy your biscotti!
