Mini Pancake Pops with Mashed Fruits

 


Ingredients:

For the Pancake Batter:

  • 1 cup all-purpose flour
  • 1 tablespoon sugar (optional)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup milk (or a dairy-free alternative)
  • 1 large egg
  • 2 tablespoons melted butter (or oil)
  • 1 teaspoon vanilla extract

Additional Ingredients:

  • Mashed fruits such as banana or berries

Instructions:

1. Prepare the Pancake Batter:

  • In a bowl, whisk together the flour, sugar (if using), baking powder, baking soda, and salt.
  • In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Don't overmix; it's okay if there are a few lumps.
  • Gently fold in the mashed fruits of your choice.

2. Cook the Mini Pancakes:

  • Preheat a griddle or non-stick pan over medium heat.
  • Grease the griddle with a little butter or oil.
  • Using a mini pancake pan or a tablespoon, drop small amounts of batter onto the griddle.
  • Cook until bubbles form on the surface, then flip and cook until both sides are golden brown.

3. Cut into Bite-sized Pieces:

  • Allow the mini pancakes to cool slightly.
  • Use a knife or mini cookie cutter to cut the pancakes into bite-sized pieces.

4. Serve and Enjoy:

  • Place the bite-sized pancake pops on a plate or tray.
  • Encourage your baby to pick them up with their fingers and enjoy!

Note: Always ensure that the pancakes are cooled to a safe temperature before serving to your baby. You can serve these mini pancake pops on their own or with a small bowl of yogurt or a fruit puree for dipping.
