Colorful Veggie Sticks and Dips

 


Ingredients:

Vegetable Sticks:

  • Carrots (orange)
  • Cucumber (green)
  • Bell peppers (red, yellow, or green)
  • Broccoli florets (green)
  • Cherry tomatoes (red)
  • Snap peas (green)

Hummus Dip:

Ingredients:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tablespoons tahini
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons lemon juice
  • Water (adjust for desired consistency)

Yogurt Dip:

Ingredients:

  • 1 cup Greek yogurt
  • 1 tablespoon finely chopped fresh dill
  • 1 teaspoon lemon juice
  • Salt and pepper to taste

Instructions:

1. Prepare the Vegetable Sticks:

  1. Wash and peel (if necessary) the vegetables.
  2. Cut carrots, cucumber, and bell peppers into thin, easy-to-hold sticks.
  3. Cut cherry tomatoes in half.
  4. Arrange the veggies in a rainbow pattern on a plate or tray.

2. Make the Hummus Dip:

  • In a blender or food processor, combine chickpeas, tahini, olive oil, minced garlic, cumin, paprika, salt, pepper, and lemon juice.
  • Blend until smooth, adding water gradually until you reach the desired consistency.

3. Make the Yogurt Dip:

  • In a bowl, mix Greek yogurt, chopped dill, lemon juice, salt, and pepper.
  • Stir until well combined.
